An intimate room. Surrounded by stone and the breath of the countryside, as the light slowly fades over the masseria.
The setting is not a backdrop, but a soft presence: the white of the lime, the shadows of the trulli, the earth so close, and time finally slowing down.

Executive chef of Orto, Fabrizio Tucci interprets a precise, profound, and tactile cuisine.
His research works on the boundary between technique and sensitivity, transforming ingredients, textures, acidities, bitters, and fermentations into propositions that weave the gastronomic narrative.
The dish does not only tell what it is. It tells what matter can become.
